How to make it

  • Heat the oil in a large pan,add the chopped garlic and cumin seeds and cook for 30 seconds
  • Reduce the heat and add the onion cook for 2-3 minutes,add masala paste and chicken,mix well and cook for further 5 minutes stirring frequently
  • Drain the tomatoes and reserve the juice.
  • Add the tomatoes to the pan with the mango and 2tbsp of the mint and the stock,bring to the boil then reduce the heat and simmer for 20 minutes stirring frequently.
  • If the mixture becomes too dry add the reserved tomato juice
