Roasted Parsnips With Honey and Ginger

- 6 parsnips shopping list
- 1 teaspoon salt shopping list
- 1/4 cup vegetable oil shopping list
- 1 tablespoon butter shopping list
- 1 tablespoon honey shopping list
- 1 tablespoon finely grated or chopped fresh ginger shopping list
How to make it
- Preheat oven to 425 then cut peeled parsnips in half and remove any woody cores.
- Put in a large saucepan and cover with water then add pinch of salt and bring to boil.
- Boil 1 minute then drain and return to saucepan and dry well by shaking saucepan 1 minute.
- Heat oil in a roasting pan on the stove then add parsnips and cook quickly over high heat.
- Add butter to pan then transfer to oven for 10 minutes then spoon or pour out the excess oil.
- Add honey and ginger turning parsnips to coat evenly and roast another 5 minutes.
- Lift parsnips out of pan and serve hot.
