How to make it

  • Preheat oven to 425 then cut peeled parsnips in half and remove any woody cores.
  • Put in a large saucepan and cover with water then add pinch of salt and bring to boil.
  • Boil 1 minute then drain and return to saucepan and dry well by shaking saucepan 1 minute.
  • Heat oil in a roasting pan on the stove then add parsnips and cook quickly over high heat.
  • Add butter to pan then transfer to oven for 10 minutes then spoon or pour out the excess oil.
  • Add honey and ginger turning parsnips to coat evenly and roast another 5 minutes.
  • Lift parsnips out of pan and serve hot.
