Peanut Butter Candy Jumbo Cookies

The recipe for these yummy, chewy cookies gives you 9 - 5" cookies. You can always make them smaller
Ingredients
- COOKIES:- shopping list
- 3/4 cup chunky peanut butter shopping list
- 1/2 cup butter - softened shopping list
- 1 cup packed brown sugar shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1 egg shopping list
- 1 1/2 tsp vanilla shopping list
- 1 1/4 cups all-purpose flour shopping list
- 2 cups quartered miniature peanut butter cups shopping list

- PIPING CHOCOLATE:- shopping list
- 1/3 cup milk chocolate chips or chopped milk chocolate bar shopping list
How to make it
- Pre-heat oven to 375 degrees
- COOKIES:-
- With an electric mixer, beat peanut butter & butter in large bowl at medium speed
- Stir together sugar, baking powder & baking soda & then beat it into the peanut butter mixture until well blended
- Beat in the vanilla & egg until well blended
- On low speed, beat in flour until just combined, scraping down the side of the bowl
- Stir in peanut butter cups with wooden spoon
- cover with plastic wrap & place in fridge until firm - about 1 hr
- Divide dough into 9 pieces
- Pat out each piece & form into cookies 4 inches across (they will spread to make 5 inch cookies)
- Can divide the dough into smaller pieces to make more cookies, but give them room to spread about 1 inch
- Place cookies on un-greased cookie sheets
- Bake 10 mins or until lightly browned

- CHOCOLATE PIPING:-
- Place chocolate in small resealable plastic freezer bag & seal, squeezing out air
- Microwave on 50% power for 1 min
- Turn bag over & microwave on medium 1 min or until melted
- Knead bag until chocolate is smooth
- Cut off tiny corner og bag & pipe decorative lines on cookies
- Let stand until chocolate has set
