This is super easy and a great recipe to use up leftovers. My kids love it because of the Ranch Dressing. (Their version of katchup)

Ingredients
  • 1 lb boneless skinless chicken, cubed or cut in bite size pieces
  • 2 tsp oil
  • 8 oz uncooked linguine
  • 3/4 cup ranch dressing
  • 1 cup tomatoes, diced
  • 1 cup broccoli, chopped
  • black pepper (taste)
  • 2 Tbsp fresh chopped Parsley
  • 1/4 cup Parmesan cheese

Directions
  1. Cook noodles according to package directions. When done, drain.
  2. While noodles cook, heat oil in wok or skillet. Cook/saute chicken till well browned. Remove from heat.
  3. Toss noodles with Ranch Dressing, Top with Chicken Tomatos and Broccoli. Spinkle with pepper, parsley and parmesan.
  4. Serve.
