Ingredients
  • 2 T butter
  • 2 T olive oil
  • 22 oz. uncooked large or jumbo shrimp, peeled & deveined
  • 1 lb. asparagus, trimmed and sliced diagonally into 2 inch pieces
  • 1 pkg. (150 g) Boursin Garlic and Fine Herbs Cheese
  • 2 T sour cream
  • 1 T lemon juice
  • pepper to taste

Directions
  1. In non stick skillet, melt butter with oil over med. high heat. Cook shrimp and asparagus, stirring occasionally, about 5 minutes or until shrimp turn pink and asparagus is just tender. (Do not overcook either the shrimp or asparagus) Stir in cheese and sour cream until melted. Stir in lemon juice and pepper; heat through.
  2. Serve immediately with hot cooked rice. Garnish with lemon slices. And don't forget the bread or rolls.
