Garlic Shrimp Asparagus Boursin Cheese

- 2 T butter shopping list
- 2 T olive oil shopping list
- 22 oz. uncooked large or jumbo shrimp, peeled & deveined shopping list
- 1 lb. asparagus, trimmed and sliced diagonally into 2 inch pieces shopping list
- 1 pkg. (150 g) Boursin garlic and Fine herbs cheese shopping list
- 2 T sour cream shopping list
- 1 T lemon juice shopping list
- pepper to taste shopping list
How to make it
- In non stick skillet, melt butter with oil over med. high heat. Cook shrimp and asparagus, stirring occasionally, about 5 minutes or until shrimp turn pink and asparagus is just tender. (Do not overcook either the shrimp or asparagus) Stir in cheese and sour cream until melted. Stir in lemon juice and pepper; heat through.
- Serve immediately with hot cooked rice. Garnish with lemon slices. And don't forget the bread or rolls.
