Holy Smokin Joses Recipe
This is a twist on Sloppy Joes. It is pretty quick and really easy. My sons like this one better than the original! It is a meal in itself, but the kids like it with corn chips on the side and a glass of milk..

Ingredients
  • Cooking spray
  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 Tablepoons minced garlic
  • 2 teaspoons ground cumin
  • 2-3 teaspoon chili powder (or more if you like!)
  • 1 teaspoon chipotle chile powder (or dice up canned chipotles)
  • 1/2 cup chili sauce or ketchup
  • 1 (15-ounce) can red kidney beans, drained and rinsed
  • 1 (15-ounce) can chili beans (spicy or not), drained and rinsed
  • 2 (14.5-ounce) can diced tomatoes (or Mexican style)
  • 12 hamburger buns
  • 12 slices sharp cheddar or Monterrey Jack cheese
  • Garnishes:
  • sliced ripe olives, if desired
  • diced fresh tomatoes, if desired
  • sliced green onions, if desired
  • sliced fresh or pickled jalapeƱos, if desired

Directions
  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add beef and onion to pan; cook 6-8 minutes or until browned, stirring to crumble. Add garlic to pan; cook 2 minutes, stirring frequently. Add cumin, chili powder, and chipotle chile powder, and cook 30 seconds. Stir in chili sauce or ketchup, beans, and tomatoes; cook about 10 minutes or until slightly thickened.
  2. Spoon about 2/3 cup beef mixture over 6 bottom bun halves, and top each with 1 slice cheese. Garnish as desired and top with the remaining bun halves.
