Cauliflower Pasta

- 3 cups fresh cauliflower shopping list
- 1 green pepper shopping list
- 2 tomatos shopping list
- 2 tbsp butter shopping list
- 2-3 tbsps cream cheese shopping list
- parmesan cheese shopping list
- 1 clove garlic/1 tsp minced garlic/liberal amt garlic powder shopping list
- cooking oil shopping list
- olive oil shopping list
- about a lb garden rotini shopping list
- salt shopping list
- italian seasoning shopping list
How to make it
- Chop the green peppers, cauliflower and tomato. Works best if the cauliflower is chopped very finely.
- Boil water for pasta. Add salt and italian seasoning to water.
- Add pasta when water boils. Stir and turn down heat.
- Heat approximately 4 tbsp cooking oil in a large pan at medium heat. Add the vegetables when the oil is warm. Add garlic. Cover and allow to cook stirring occasionally. The vegetables should release sufficient moisture so that it remains watery.
- When pasta is al dente drain and toss with a tbsp or two of olive oil. Put aside until sauce is done.
- When the vegetables are almost soft add two tbsp butter and cook until vegetables are finished.
- Next add 2-3 tbsp cream cheese. Lower heat and mix in the cream cheese. If the sauce is not a little runny add water.
- Sprinkle with parmesan cheese to taste and stir in.
- Combine pasta and sauce and serve.
