I started making this soup with leftover barbeque meat, and it has evolved into something my whole family looks forward to after family barbeques.

Ingredients
  • 1-2 C leftover barbeque meat-anything goes: chicken, beef, pork (any meat can be used, but I prefer BBQ leftovers)
  • Bag of frozen mixed veggies
  • Bag of frozen corn
  • 2 cans creamed corn
  • 1 can rotel
  • One medium onion, chopped
  • 1/2 C chopped bell pepper
  • 1/2 C chopped celery
  • 2 tbsp minced garlic
  • 4 C water
  • 4 chicken boullion cubes
  • 6 frozen mini ears of corn
  • 1/2 tsp cayenne pepper
  • 1 tsp basil
  • 2 tsp parsley
  • 1/2 C Barbeque sauce
  • Salt and pepper to taste

Directions
  1. Boil all ingredients together for about one hour, and enjoy!
