Easy Asian Chicken and Rice

- 1 whole chicken, cleaned and excess fat removed shopping list
- 4 slices ginger root shopping list
- 4 cloves garlic, smashed shopping list
- salt shopping list
- water shopping list
- 1 teaspoon canola oil shopping list
- 1 small onion, diced shopping list
- 2 garlic cloves, chopped shopping list
- 2 cups rice shopping list
- 1/4 cup soy sauce shopping list
- 1 teaspoon sesame oil shopping list
- 1 teaspoon ginger, minced shopping list
- 1 scallion, chopped shopping list
- 1 jalapeno, choppped shopping list
- cucumber, tomatoes, lettuce, broccoli, whatever you like! shopping list
How to make it
- Make chicken:
- Boil mildly salted water in a pot, enough to just cover the chicken. When it boils, add ginger slices, smashed garlic, and chicken.
- Cover and boil for 10 minutes.
- Turn off heat and let chicken sit in pot, covered for 1 hour.
- Remove chicken and drain and reserve stock.
- Make rice:
- Heat oil in pot and cook onion and minced garlic until softened.
- Add rice and cook until coated with oil.
- Add 4 cups reserved chicken stock, reduce heat and cook until rice is done.
- Make dipping sauce:
- Mix soy, sesame oil, minced ginger, scallion and jalapeno.
- Add some water to sauce if desired to mellow it out a bit.
- Serve chicken, rice and veggies with sauce on side.
