How to make it

  • Make chicken:
  • Boil mildly salted water in a pot, enough to just cover the chicken. When it boils, add ginger slices, smashed garlic, and chicken.
  • Cover and boil for 10 minutes.
  • Turn off heat and let chicken sit in pot, covered for 1 hour.
  • Remove chicken and drain and reserve stock.
  • Make rice:
  • Heat oil in pot and cook onion and minced garlic until softened.
  • Add rice and cook until coated with oil.
  • Add 4 cups reserved chicken stock, reduce heat and cook until rice is done.
  • Make dipping sauce:
  • Mix soy, sesame oil, minced ginger, scallion and jalapeno.
  • Add some water to sauce if desired to mellow it out a bit.
  • Serve chicken, rice and veggies with sauce on side.
