Easy Asian Chicken And Rice Recipe
This is a great method for cooking chicken and rice that results in super-moist, flavorful chicken. it is wonderful either hot or cold, more like a salad. Serve the chicken and rice with some veggies and the dipping sauce.

Ingredients
  • 1 whole chicken, cleaned and excess fat removed
  • 4 slices ginger root
  • 4 cloves garlic, smashed
  • salt
  • water
  • 1 teaspoon canola oil
  • 1 small onion, diced
  • 2 garlic cloves, chopped
  • 2 cups rice
  • 1/4 cup soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 scallion, chopped
  • 1 jalapeno, choppped
  • cucumber, tomatoes, lettuce, broccoli, whatever you like!

Directions
  1. Make chicken:
  2. Boil mildly salted water in a pot, enough to just cover the chicken. When it boils, add ginger slices, smashed garlic, and chicken.
  3. Cover and boil for 10 minutes.
  4. Turn off heat and let chicken sit in pot, covered for 1 hour.
  5. Remove chicken and drain and reserve stock.
  6. Make rice:
  7. Heat oil in pot and cook onion and minced garlic until softened.
  8. Add rice and cook until coated with oil.
  9. Add 4 cups reserved chicken stock, reduce heat and cook until rice is done.
  10. Make dipping sauce:
  11. Mix soy, sesame oil, minced ginger, scallion and jalapeno.
  12. Add some water to sauce if desired to mellow it out a bit.
  13. Serve chicken, rice and veggies with sauce on side.
