How to make it

  • Preheat oven to 400 then peel and slice peaches.
  • Combine peaches with 3/4 cup sugar, cornstarch and lemon juice then gently stir in raspberries.
  • Transfer to baking dish then cover with foil and bake 30 minutes.
  • Meanwhile combine 1/4 cup sugar, flour, baking powder and salt.
  • Cut in butter until mixture resembles coarse meal.
  • Stir milk into flour mixture until ingredients just hold together.
  • Drop eight heaping spoonfuls of dough onto hot fruit and sprinkle remaining sugar on dough.
  • Bake uncovered until biscuits have browned about 25 minutes.

    Kroger had raspberries for $1 a pack and I bought 10!! I made America's Test Kitchen Raspberry Cobbler and I think I'll make this with the last 5 packs. Hope to find some good peaches today. Thanks for sharing. Just FYI, this recipe is very similar to ATK's recipe which was so, so yummy so I'm sure this will be delicious too! ATK said the baking of the fruit before adding the topping is a key part to the recipe's success. Thanks for sharing. Peg
