Ingredients
  • 10 medium new potatoes (about 3 ½ pounds)
  • 1 ¼ lbs firm apple
  • 1 ½ tbsp honey
  • 2 tsp salt
  • ½ tsp pepper
  • 2 ¼ cups cold water
  • ½ lb smoked bacon, diced
  • 2 medium onions, peeled and sliced into ¼ inch rings, separated
  • 1 ½ tbsp lemon juice

Directions
  1. Peel and quarter potatoes, the cut potato quarters into ½ inch thick slices. Peel and core apples, then cut into 6 wedges per apple. Combine honey, 1 tsp of salt, pepper and water in large skillet. Add potatoes and apples; bring to a boil over medium high heat. Cover; reduce heat to medium. Simmer, without stirring, about 20 minutes or until potatoes are tender; do not overcook.
  2. In medium skillet, sauté bacon over medium heat until crisp. Drain bacon on paper towels. Drain all but 2 tbsp bacon drippings from skillet. Add onion rings to drippings; sauté over medium heat 10 minutes or until tender and lightly browned. Stir remaining 1 tsp salt and lemon juice into cooked potatoes and apples. Spoon potatoes and apples into a heated serving dish. Top with cooked onion rings and bacon. Serve hot. Makes 8-10 servings.
