Came up with this recipe for my other half, who is diabetic. I usually send this with him when he travels for business. He often shares this with his co-workers, who are always asking him if I sent more with him!

This looks really good. I have a similar recipe but instead of walnuts I add a Tablespoon of mini chocolate chips to the top. Just a little goes a long way.
