Quick Caprese Recipe
A quick and lighter pasta dish that's easy to prepare and goes with alot. I love to serve it with sauted boneless chicken breast and a caesar salad. My sister came up with this one.

Ingredients
  • 1/2 pound angel hair or other thin pasta
  • 1 cup diced (or thin julienne) onion
  • 1 clove garlic minced
  • 1 cup favourite Italian dressing (I prefer light kind with less oil)(vinegar will lose its punch with cooking)
  • 1 cup water
  • 1/2 cup fresh basil julienned
  • 1/2 teaspoon Italian blend herbs optional
  • about 3 cups cherry or other small tomatoes cut bitesize
  • 1/2 teaspoon ground black pepper
  • 1-2 T butter optional
  • parmesan or fav shredded cheese

Directions
  1. Prepare pasta per package instructions ( I like it on the softer side for this dish)
  2. Meanwhile...
  3. In a large skillet (big enough to hold everything at end) add all but tomatoes and cheese (add basil here or save some/all for fresh toss at end)
  4. Heat on high until onions soften
  5. add tomatoes and cook until heated through
  6. add pasta and toss to mix and heat (if you like the tang of dressing add a few tablespoons of uncooked dressing now to kick up the flavour)
  7. serve immediately and sprinkle with fav cheese

Alterations


to add more punch to nutrition add some zucchini sticks or carrot shavings, pan fried firm tofu is good, too for a veggie protein extra
