How to make it

  • Cube chicken and sausage and fry in large stock pot(or down in louisiana a black pot or magnalite).
  • Fry until almost cooked thru, then remove from pot.
  • Pour chicken broth, tomatoes with juice and tablespoon of roux into pot and bring to a boil.( you can add water here if you feel you need more juice)
  • Add onions and bell peppers.
  • Once boiling return meat to pot and cook over medium heat for about 30 minutes.
  • Season to taste as your cooking.
  • Once cooked, turn to low and add frozen okra and cover for 15 minutes.
  • Serve over rice.
  • ** My husband likes to season his chicken before he puts it to fry in the pot **
