BAVARIAN APPLE PANCAKE I obtained this recipe from an estate sale when I purchased the family collection from the Omega Estate in Waxahachie, Texas in 1994.

Ingredients
  • 3 large eggs
  • 1/8 teaspoon nutmeg
  • 3 tablespoons flour
  • 6 tablespoons milk
  • 2 tablespoons butter melted
  • 1/4 cup raisins
  • 1/4 cup sliced almonds
  • 2 large tart cooking apples
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves

Directions
  1. Preheat oven to 450.
  2. In mixing bowl beat eggs and nutmeg with a whisk.
  3. Add flour in 3 additions and beat after each addition until mixture is smooth.
  4. Add milk in 2 additions beating slightly after each then lightly beat in butter.
  5. Pour mixture into a well buttered pie plate then sprinkle top with raisins and almonds.
  6. Bake 8 minutes in hot oven then reduce heat to 350 baking 8 minutes more.
  7. While baking peel core and thinly slice apples.
  8. Melt 2 tablespoons butter in small skillet then add apples and sprinkle with sugar and spices.
  9. Cook slowly over low heat turning occasionally until glazed and tender.
  10. After pancake is cooked remove pie plate from oven and divide into halves.
  11. Top with sliced apples and serve hot.
