How to make it

  • Beat the chicken breasts to about 1/4" thick (I use a 5lb dumb bell wrapped in cling wrap works like a champ)
  • thin slice the onion and coarsely chop
  • Mince the ginger and the garlic
  • Coarsely chop the green pepper
  • Heat the oil and sauté the onion, and garlic for a few minutes until the onion is opaque.
  • Add pineapple w/ juice, ginger, star anise, green pepper, tomatoes, and the chicken.
  • Cook on medium simmer for 30 minutes
  • Add squash and carrots and cook an addition 10 minutes or until tender
  • Serve over hot rice

    This doesn't sound "Atoll" like anything my family would dislike! I'll have to use the mallet because my dumbell isn't too good in the kitchen.... I mean, we leave the dumbells at the gym!!
