Ingredients
  • 2 Half boneless skinless chicken breasts
  • 1 can pineapple chunks with juice
  • 1 med onion thin sliced
  • 2 cloves garlic minced
  • 2 tsp minced fresh ginger
  • 3 Star Anise fruits (I had to look it up as I didn't know what to call the little buggers)

  • 1/2 cup carrots cut into matchsticks
  • 2 summer squash (about 2 cups) sliced in 1/2" pieces and then cut in half

  • 1 TBS Olive oil

Directions
  1. Beat the chicken breasts to about 1/4" thick (I use a 5lb dumb bell wrapped in cling wrap works like a champ)
  2. thin slice the onion and coarsely chop
  3. Mince the ginger and the garlic
  4. Coarsely chop the green pepper
  5. Heat the oil and sauté the onion, and garlic for a few minutes until the onion is opaque.

This doesn't sound "Atoll" like anything my family would dislike! I'll have to use the mallet because my dumbell isn't too good in the kitchen.... I mean, we leave the dumbells at the gym!!
