Atoll Chicken

- 2 Half boneless skinless chicken breasts shopping list
- 1 can pineapple chunks with juice shopping list
- 1 med onion thin sliced shopping list
- 2 cloves garlic minced shopping list
- 2 tsp minced fresh ginger shopping list
- 3 star anise fruits (I had to look it up as I didn't know what to call the little buggers) shopping list
- 1 Large green pepper shopping list
- 2 Med tomatoes skinned and seeded then coarsely chopped. shopping list
- 1/2 cup carrots cut into matchsticks shopping list
- 2 summer squash (about 2 cups) sliced in 1/2" pieces and then cut in half shopping list
- 1/4 Cup soy sauce (I use Aloha shoyu it is low salt and great stuff but good luck finding it! We have to go to a Chinese market in Kansas City.) shopping list
- 1 TBS olive oil shopping list
How to make it
- Beat the chicken breasts to about 1/4" thick (I use a 5lb dumb bell wrapped in cling wrap works like a champ)
- thin slice the onion and coarsely chop
- Mince the ginger and the garlic
- Coarsely chop the green pepper
- Heat the oil and sauté the onion, and garlic for a few minutes until the onion is opaque.
- Add pineapple w/ juice, ginger, star anise, green pepper, tomatoes, and the chicken.
- Cook on medium simmer for 30 minutes
- Add squash and carrots and cook an addition 10 minutes or until tender
- Serve over hot rice

This doesn't sound "Atoll" like anything my family would dislike! I'll have to use the mallet because my dumbell isn't too good in the kitchen.... I mean, we leave the dumbells at the gym!!
