Love to have chicken in the freezer that's ready to go when I want to make a casserole or something...we rarely have enough leftover chicken for another dish...we both take leftovers in our lunch every day, so, it helps me to have this in the freezer... More

Ingredients
  • 2.5 - 3 lbs skinless boneless chicken breast tenderloins (or any pieces - I like thighs!!)
  • EVOO
  • Margarine
  • BASIC VERSION
  • White Wine Worcestershire or Lea & Perrins Chicken Marinade
  • 2 T Garlic
  • Seasoned Salt
  • Garlic Pepper
  • Celery Flakes
  • MEXICAN VERSION
  • As Above, shake in Taco Seasoning, Cumin, a pinch of chili powder, Dried Cilantro

Directions
  1. Cube chicken
  2. Drizzle non stick skillet with EVOO and a pad of margarine
  3. Throw in chicken and desired seasonings
  4. Saute until done, freeze and use in soups, stews, casseroles, fajitas, etc etc
