I've seen so many bread recipes with dry milk in them. Can I ask what the purpose of it is? Especially considering that the recipes I've seen also have water, couldn't you just skip the powder and use milk instead of water? I've always wanted to know but never thought to ask till now! :)

I have made five of the most terrific door stop/hockey pucks. After 15 wasted cups of flour and endless hours, I give up. Maybe some of us just weren't cut out to bake no-knead bread.
