How to make it

  • Lay out frozen homemade corn tortillas to defrost
  • chop mushrooms, onions, garlic, peppers and saute on medium heat
  • add dash of white wine to veggies
  • while sauteing, lightly poach eggies
  • shred gouda
  • slice ripe avocados
  • warm tortillas in oven
  • Place one egg per on top of warm tortillas
  • dash of cayenne
  • add sauteed veggies on top of egg
  • add gouda on top of veggies
  • place slices of avocado on side
  • dollop salsa on side
  • yum
