Easy Beef Stroganoff Recipe
This creamy easy beef stroganoff is a great example of a weeknight dinner that can be on the table quickly.

Ingredients
  • 2 lbs. Ground beef
  • 1/2 onion, chopped
  • 2 cans beef consommé
  • 2 small cans sliced mushroom pieces
  • 3 Tblsp. Lemon juice
  • 2 Tblsp. Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup sour cream
  • Egg noodles

Directions
  1. Brown beef and onion; drain fat. All all other ingredients except sour cream. Cook together for approximately 15 minutes. Just before serving, after removing from heat, add sour cream. Serve over hot egg noodles.

Alterations


When I made this is it was very soupy and bland (except for the very strong lemon flavor). We don't really eat much red meat so I used ground turkey - but I don't think that had a HUGE effect on the outcome but I suppose it could've. I'd suggest cutting the lemon down by at least 1/2. From there I doubled the Worcestershire, added about a tablespoon-ish each of garlic and onion powders, 2/3 block of cream cheese, seasoned salt and made a roux of butter and flour that I mixed in after I found that even with the noodles soaking up sauce it was still too runny.
