Mini-Quiche Recipe
I first had these at a tea in Cape May. The recipe was given to my from a caterer. The mini crusts are made in the mini-tins.

Ingredients
  • Crust: 1 cup flour
  • 3 oz. cream cheese
  • 1/2 cup butter
  • Filling: 1/2 cup chopped onion
  • 1 Tbsp. olive oil
  • 1/2 cup sour cream
  • 1 egg, slightly beaten
  • 1/2 cup swiss cheese
  • 1/4 tsp salt
  • dash pepper

Directions
  1. Crust: Mix the flour, cheese and butter tog. Chill for 1 hr. Roll into 12 balls, each for 1 crust.
  2. Filling: Saute the onions in the oil. Cool.
  3. Add the sour cream, egg, swiss cheese, salt and pepper.
  4. Shape little crust in 12 mini-cupcake tins.
  5. Add filling.
  6. Bake 350 degrees for 25 to 30 minutes.

I am glad I had time to check out some of your recipes - this is another that can easily be made GF by using rice of GF flour mix - High 5!
