Steak With Eggplant Pesto Recipe
We rarely eat beef, but when we do, I try to come up with something a bit different but delicious. Using leftovers from the fridge, this recipe proved to be very gourmet and comapny fare for the next time. So I wrote it down lest I forget !

Ingredients
  • 1 good quality steak for pan frying to serve 2
  • 1 medium eggplant
  • 1 small onion chopped
  • 2 cloves garlic
  • 1/4 cup home made or bottled basil pesto sauce
  • 1 Tbs fresh chopped cilantro
  • 1/4 cup extra virgin olive oil
  • red wine ( Merlot ) to deglaze pan

Directions
  1. Peel eggplant, slice thin but not paper thin and then cube slices.
  2. Heat olive oil in large skilltet medium heat
  3. Add eggplant and cook and stir till egg plant browns and starts to get soft
  4. Add onion and cook to soften onion
  5. Add pesto sauce and stir well
  6. Add garlic and cook a minute or two
  7. Then push mixture aside and add seasoned to taste, steak.
  8. Cook steak over medium hight heat to brown
  9. If veges start to stick, add a few splashes of red wine and scrape ands stir bottom of pan
  10. Turn steak over to finish cooking ( we like med rare )
  11. Serve steak with eggplant pesto on the side
