German Ginger Cake Recipe
This wonderful, moist, dense ginger cake is a great coffee cake. Traditionally served with coffee, it is great with Earl Grey tea!

Ingredients
  • 150 grams of butter
  • 150 grams of sugar
  • 200 grams of all purpose flour
  • 1 tbsp baking powder
  • 1 large egg
  • 1 egg + water for egg wash
  • 1/4 tsp salt
  • 3-5 knobs of crystallized ginger, chopped with 1 tbsp syrup from the jar
  • flaked almonds

Directions
  1. Preheat the oven to 350 F
  2. Melt the butter and add sugar, salt, flour and ginger + syrup together. Beat the egg and add almost all of it to the batter. Mix well.
  3. Butter and flour an 8 in cake tart.
  4. Press the dough into the tin with a fork. Brush with the egg wash.
  5. Top with flaked almonds.
  6. Put it in the oven. It will have to bake for about 30 minutes,
  7. until firm and golden brown.
