How to make it

  • Preheat oven to 425.
  • In a large heavy skillett, toast almonds until golden brown over high heat.
  • Brush the top of the brie with the butter.
  • Sprinkle with toasted almonds and press to embed the almonds in the Brie.
  • Roll two puff pastry sheets until 1/8" thick, slightly larger in diameter than the cheese.
  • Place the Brie wheel on top of one sheet, and cover with the other.
  • Pinch sides together and trim off extra dough.
  • Beat 1 egg with 2 tsp water, and brush over top and sides of pastry, reserving some.
  • Cut leaves, flowers, etc from the third sheet of pastry. Decorate the top of the wheel. (Avoid more than 2 layers of decoration)
  • Brush remaining surfaces with the rest of the egg mix.
  • Bake for 30 minutes or until golden brown.
