Pineapple Condement for Curry

- 1 ripe pineapple shopping list
- large handful of fresh mint shopping list
- sugar shopping list
How to make it
- top and tail pineapple,peel and remove core
- cut into bite sized chunks
- take a large handful of mint and crush in a pestle and mortar
- add enough sugar to just hydrate mint, about 1-2 tbl spoons
- wiz pestel around crushing mint into sugar
- sprinkle sugar/mint on pineapple pieces and use as a condiment for hot curry dishes
- keep chilled till use
