How to make it

  • top and tail pineapple,peel and remove core
  • cut into bite sized chunks
  • take a large handful of mint and crush in a pestle and mortar
  • add enough sugar to just hydrate mint, about 1-2 tbl spoons
  • wiz pestel around crushing mint into sugar
  • sprinkle sugar/mint on pineapple pieces and use as a condiment for hot curry dishes
  • keep chilled till use
