Chicken Soup With Turkey Meatballs Recipe
I just got over a very bad cold and this chicken soup recipe makes me feel better every time. It's not saltly like canned soup and it's made from scratch, so you can't go wrong!

Ingredients
  • 3-4 lb. whole chicken, rinsed
  • 4-5 celery stalks, chopped in half
  • 2 onions, chopped in quarters
  • Salt to taste
  • 10 whole black peppercorns
  • 3 carrots, grated
  • 1 package frozen chopped spinach - thawed, rinsed and drained
  • 1 lb. ground turkey
  • salt and pepper
  • 2 tablespoons grated parmesan cheese
  • Pastina pasta
  • Grated parmesan cheese for serving

Directions
  1. Add chicken, celery and onions to a large pot. Cover with water. Add salt and peppercorns to water. Cook for 1 - 1 1/2 hours, or until chicken is done.
  2. While chicken is cooking, mix ground turkey, salt and pepper, and grated parmesan cheese together. Form small meatballs and set aside. One pound of turkey should make about 75 meatballs.
  3. Strain chicken broth and discard celery, onions and peppercorns. Pull chicken off the bone and add to the broth. Add grated carrots and spinach to broth. Add meatballs. Put broth back on stovetop and cook on medium until meatballs are cooked through.
  4. While soup is cooking, in a separate pot, cook pastina pasta according to directions (as much as you'd like). Drain when done. Add pasta to a serving bowl, add soup, and sprinkle parmesan cheese on top of soup before serving.
  5. Enjoy!
