Velvety Tomato Cheddar Soup

- 1/4c uncooked brown rice shopping list
- 1c chopped onions shopping list
- 1c chopped carrots shopping list
- 2Tbs butter shopping list
- 1qt. chicken broth shopping list
- 1c vegetable juice shopping list
- 1c half and half shopping list
- 11/2c shreaded cheddar cheese shopping list
- fresh chives shopping list
How to make it
- In a saucepot,cook rice,onions and carrots in butter for 5 mins. Add chicken broth. Bring to a boil reduce heat; let simmer 35 mins.,or till rice is tender.
- In blender puree mixture 2 mins. Return to pot. Add vegetable juice. Cook 10 mins. Stir in half and half and shreaded cheddar cheese. Garnish with fresh chives,if desired
