How to make it

  • In a saucepot,cook rice,onions and carrots in butter for 5 mins. Add chicken broth. Bring to a boil reduce heat; let simmer 35 mins.,or till rice is tender.
  • In blender puree mixture 2 mins. Return to pot. Add vegetable juice. Cook 10 mins. Stir in half and half and shreaded cheddar cheese. Garnish with fresh chives,if desired
