Velvety Tomato Cheddar Soup Recipe
Easy cream of tomato and cheese soup.

Ingredients
  • 1/4c uncooked brown rice
  • 1c chopped onions
  • 1c chopped carrots
  • 2Tbs butter
  • 1qt. chicken broth
  • 1c vegetable juice
  • 1c half and half
  • 11/2c shreaded cheddar cheese
  • fresh chives

Directions
  1. In a saucepot,cook rice,onions and carrots in butter for 5 mins. Add chicken broth. Bring to a boil reduce heat; let simmer 35 mins.,or till rice is tender.
  2. In blender puree mixture 2 mins. Return to pot. Add vegetable juice. Cook 10 mins. Stir in half and half and shreaded cheddar cheese. Garnish with fresh chives,if desired
