A quick, savoury homemade crisp coating mixture for fish and poultry, made with corn flakes cereal and spices.

Ingredients
  • DRY COATING MIXTURE:
  • 1/2 cup (125 ml) corn flakes cereal (finely chopped with a food processor)
  • 1/2 cup (125 ml) dry bread crumbs (OR japanese panko bread crumbs)
  • 1 tbsp (15 ml) dried parsley
  • 1/4 tsp (1 ml) garlic powder
  • 1/4 tsp (1 ml) paprika
  • 1/4 tsp (1 ml) celery salt
  • 1/4 tsp (1 ml) dried thym
  • 1/4 tsp (1 ml) dried basil
  • 1/4 tsp (1 ml) dry mustard (powder)
  • Pinch of cayenne pepper or more to taste
  • Salt and pepper
  • 4 chicken fillets or fish fillets (boneless)
  • Salt and pepper
  • 2 large eggs
  • 2 tbsp (30 ml) milk
  • 1/4 to 1/2 ( 50 to 125 ml) cup all purpose flour

Directions
  1. Preheat oven to 400 degrees F.
  2. Mix the dry coating mixture ingredients together and reserve.
  3. Leave whole or cut the chicken fillets or fish fillets in 1 1/2 inch pieces. Season with salt and pepper.
  4. Whisk the eggs with the milk with a fork.
  5. Dip the chicken or fish in the all purpose flour, remove excess and dip in the egg/milk mixture and then in the dry coating mixture.
  6. Place coated chicken or fish on a ligthty oiled baking pan.
  7. Bake from 7 to 8 minutes on each side and serve.
  8. NOTE: You could fry the coated fish or poultry in oil in a frying pan until brown on each side.
