Fresh Orange Muffins Recipe
THese muffins have a heavy, moist texture with a good orange flavor. Excellent made with grapeseed oil and applesauce to replace butter.

Ingredients
  • 1 orange, seeded & quartered
  • 1 large egg
  • 1/2 cup orange juice
  • 1/2 cup grapeseed oil plus 1/2 cup applesauce OR 1/2 cup butter
  • 1 3/4 cups all purpose flour
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda

Directions
  1. Preheat oven to 400°; spray a muffin pan with non-stick cooking spray, set aside.
  2. Put orange quarters in food processor or blender along with orange juice and process or blend until pureed.
  3. Add egg, grapeseed oil & applesauce (OR BUTTER) and combine; pour into large bowl.
  4. Combine dry ingredients in separate bowl, then add all at once to orange mixture. Stir to combine.
  5. Fill muffin cups about 3/4 full.
  6. Bake in preheated oven for 20 minutes,; remove from oven and let stand for 5 minutes before removing muffins. YUMMY!
