A quick tasty snack, or meal with a nice salad the children will love these, and they are so easy to make

Ingredients
  • 3 Baked potatoes (large)
  • 3 eggs
  • 1 oz grated cheese of your choice
  • 1/2 oz butter
  • salt, pepper and a few breadcrumbs

Directions
  1. Scrub potatoes and bake
  2. Slice off the top of each potato
  3. Scrape out the centre of each potato and pour in a raw egg
  4. Mash the potato removed from each jacket, add salt and pepper
  5. Place the mash around the edge of the eggs in the jackets
  6. sprinkle with cheese and breadcrumbs
  7. Add small pieces of butter
  8. Cook in oven 200c / gas 6 for approx 15 min's
