Skillet Lamb Chops Recipe

Ingredients
  • 4 shoulder lamb chops
  • salt and pepper
  • 1/4 cup cooking oil
  • 1 clove garlic, cut in half
  • 1/2 cup dry white wine
  • 1 bup boiling water
  • 1 cube chicken bouillon
  • 2 strips lemon rind, cut the length of the lemon with a vegetable peeler
  • 8 small onions
  • 8 carrots, cut in thick slices on diagonal
  • 4 medium potatoes, peled

Directions
  1. Sprinkle chops generously with salt and pepper.
  2. Heat oil and galic pieces in heavy skillet.
  3. Lift out and discard garlic.
  4. Add chops and brown well on both sides.
  5. Add wine, water, chicken bouillon cube and lemon rind, cover tightly and simmer until chops are beginning to get tender, about 30 minutes.
  6. Add oinions, carrots and potatoes.
  7. Sprinkle generously with salt and pepper, cover again and continue simmering about 30 minutes or until vegetables are tender.
  8. Sprinkle with parsley.
