How to make it

  • Saute peppers and onions in pan for about 5 minutes
  • Stir in about 3 oz brie until melted
  • Add the garlic and cook for about another minute.
  • Rinse the preserved lemon and slice the rind into strips, throwing out the pulp
  • Add the kale (ribs removed), preserved lemon, and chicken. Cover and cook for about 15 minutes.
  • Turn chicken and cook until 165
  • Remove chicken and slice
  • Adjust seasoning to sauce, add lemon if needed
  • Return sliced chicken to pan, stir and serve with crusty bread.

It's probably best to add them in the last 10 or so minutes I suppose, but I didn't do that this time. It was really good though!

This sounds intriguing. I love preserved lemons and I'm always looking for a use for them.
