Bumbu Bali chicken

- 1 1/2 kg chicken cut in pieces (min 15 pcs). shopping list
- 1 c chicken broth ( from cube). shopping list
- 8 tbs olive oil, (sunflower or sesam oil will do too). shopping list
- 1 kg medium size onions ( roughly chopped). shopping list
- *7 tbs ketjap. shopping list
- 3 cloves garlic chopped. shopping list
- 1 tbs lemon juice. shopping list
- *2 tbs ground laos. shopping list
- *2 tbs ground sereh. shopping list
- *1 cube terasi. shopping list
- 3 tbs sugar. shopping list
- 2 tbs sambal oelek or to taste depending how hot you want the dish to be. shopping list
- * we can get in Chinese or Indonean shop ( toko ). shopping list
How to make it
- Put chicken pcs in a big frying pan with the oil and bake ca 8 min till lightly browned turn and bake another 7 min, take chicken out and set aside.
- Bake onions and garlic in the oil till brown ca 10 min on low heat.
- Put chicken back in the pan, add the ketjap, lemon juice, laos, sereh, terasi and sambal to taste.
- Add broth and simmer on low for 180 min add sugar 10 min before finishing and mix.
- Serve with pandan or basmati rice.
