Ingredients
  • 2 medium sized eggplant, sliced and cooked.
  • Place in large oblong baking dish.
  • Mix:
  • 1/2 c. (melted bargarine)
  • 1/2 c. cheese (shredded)
  • 1/2 c. cracker crumbs
  • 2 whole eggs beaten
  • 2 Tbsps. flour
  • 1 c. milk
  • 1/2 tsp. salt
  • Dash pepper

Directions
  1. Pour over eggplant, bake in 375 degree oven 1/2 hour, serves 8.
