Direct Rack Baked Pizza Dough Recipe
This pizza puts the ingredients on an all new type of crust.

Ingredients
  • 4 cups flour
  • 2 cups hot water
  • 3 packets yeast
  • 1 tablespoon sugar
  • for each pizza - this dough recipe makes 4
  • 1 - 14oz can diced tomatoes- chili pepper if available
  • salt, pepper, oregano, basil to taste
  • 1 teaspoon olive oil
  • hard salami to taste
  • 2 oz grated Italian hard cheese
  • 3 oz mozzarella cheese

Directions
  1. 4 cups flour in a large bowl
  2. to 1 cup very warm water add yeast and sugar mix
  3. blend with flour with fork
  4. add addition 3/4 to 7/8 cup very warm water
  5. pour on surface and knead for 5 minutes
  6. score top and allow to rise for 40 minutes
  7. divide into 4 and knead each quarter for 1 minute
  8. let rise for 5 minutes
  9. roll quarters out 1 by 1 into 12" circles
  10. slide onto grate of preheated 425 degree over
  11. bake each until slightly brown and stiff
  12. remove let cool
  13. spoon contents of tomatoes less liquid
  14. drizzle with olive oil
  15. salt, pepper, oregano, basil to taste
  16. sprinke cheeses
  17. cut and lay on salami in strips
  18. bake for 15 minutes on directly on rack
