Who doesn't love egg salad? Now imagine a kicked up version with cheese! Doesn't get any better than this. Use with your favourite bread, but I like a nice, hearty rye w/ sprouts and tomatoes! :-)

Ingredients
  • 1 cup shredded process cheese (eg: Velveeta)
  • 1 cup cheddar and mozzarella blend, grated (or use your favourite cheeses)
  • 4 hard boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1/2 large celery stalk, diced
  • 1 tsp prepared mustard
  • salt and fresh ground pepper to taste

Directions
  1. Combine everything together and chill. :-) Use in sandwiches or spread on crackers.
