Possum And Taters Recipe
This is a REAL recipe. I couldn't resist posting it *G*All jokes aside. Try this recipe with Roast Beef , it really is good

Ingredients
  • 1 opossum, cut into serving pieces
  • water to cover
  • 2 teaspoons of salt
  • 1/8 teaspoon black pepper
  • 4 baking-size sweet potatoes, pared and quartered
  • 1 cup sugar
  • 1 stick cold margarine, chopped

Directions
  1. Skin and dress oppossum.
  2. Put in dutch oven and cover with water
  3. add salt and pepper
  4. Cover and cook over medium heat until very tender.
  5. Place opposum pieces in center of a large baking pan and arrange sweet potatoes around them
  6. sprinkle sugar and margarine over potatoes
  7. pour 2 cups of broth from cooked opposum over all
  8. place in preheated 375 degree oven and bake until potatoes are fork tender, slightly browned, and broth has evaporated.

Where on earth would I get opossum???? LOL Do I have to go out and shoot it myself?


ROADKILL Cooking, 101...lol What a great post! I love it. How about opening up a Roadkill group just for fun?


Annie...that's a great idea...LOL.....I have tons of roadkill recipes....lol


Greek girl....well you could get a friend to shoot it for you...lol....either that, or lay in wait on a country road in your car after dark. Then when a possum jumps out of the bushes, gun your engine and run over it.....this way it will be tenderized for you....LOL
