How to make it

  • Skin and dress oppossum.
  • Put in dutch oven and cover with water
  • add salt and pepper
  • Cover and cook over medium heat until very tender.
  • Place opposum pieces in center of a large baking pan and arrange sweet potatoes around them
  • sprinkle sugar and margarine over potatoes
  • pour 2 cups of broth from cooked opposum over all
  • place in preheated 375 degree oven and bake until potatoes are fork tender, slightly browned, and broth has evaporated.

    greek girl....well you could get a friend to shoot it for you...lol....either that, or lay in wait on a country road in your car after dark. Then when a possum jumps out of the bushes, gun your engine and run over it.....this way it will be tenderized for you....LOL
