Ingredients
  • 200g Baby Potatoes
  • 500g Baby Spinach
  • 90g Cheddar
  • 4 firm Hake fillets
  • 50g Breadcrumbs
  • 20ml Olive oil
  • 30ml Fresh Parsley, chopped

Directions
  1. Preheat the grill.
  2. Cook the baby potatoes in boiled salted water until tender.
  3. Drain and set aside.
  4. Cook spinach in microwave until wilted.
  5. Drain and chop roughly.
  6. Add the cheese and season well.
  7. Put the fish fillets on a baking tray with a little olive oil.
  8. Divide spinach mix into 4 and place on each fillet.
  9. Sprinkle over the breadscrumbs and grill 10 to 12 minutes.
  10. Lightly crush potatoes with fork.
  11. Drzzle with olive oil and chopped parsley.
  12. Serve with the fish.
