AFRICAN CHICKEN
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jacobs Estate in Mabank, Texas in 1987.

Ingredients
- 4 pounds chicken pieces
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon curry powder
- 1 large white onion peeled and sliced
- 1 large sweet red pepper cut in strips
- 1 large white onion

- 1 large tomato
- 1-1 /2 cups uncooked rice
- 1/4 cup crunchy peanut butter
- 1/4 cup warm water
Directions
- Brown chicken in vegetable oil in large frying pan then set aside.
- Remove all but 2 tablespoons oil and drippings in pan.
- Stir in curry powder and salt then onion, red pepper and tomato.
- Cover and simmer 5 minutes then return to pan and cover then simmer until chicken is tender.
- Remove chicken to large platter then blend peanut butter and water and stir in vegetables.
- Heat to boiling then spoon over chicken.
