Chicken Enchiladas - Easy Recipe
The easiest and best chicken enchiladas you will ever make. Simple ingredients + lots of cheese = a delicious masterpiece.

  • 3 Medium Chicken Breasts - skinless, boneless
  • 1 Can Cream of Chicken
  • 1 Small Can Green Chiles
  • 1/2 Cup Milk
  • 4 Oz Sour Cream
  • 1 Pkg Flour Tortillas (6-8)
  • 2 Cups Shredded Cheese (3 Cheese Mexican Mix preferred)

Directions
  1. Bake chicken in aluminum foil at 375 degrees for 30-35 min until white.
  2. Dice chicken.
  3. Mix cream of chicken, milk, sour cream, green chiles in medium mixing bowl. Once mixed, add diced chicken and mix.
  4. Grab a tortialla, using a spoon add the mixture into the tortilla. Wrap the tortilla like an enchilada and place in 12" x 10" greased glass pan. Make sure to save 1/3 of your chicken mix to spread on top.
  5. Once you've placed your 6-8 chicken enchiladas in your pan, spread the remaining chicken mixture on top. Then spread the 2 cups of shredded cheese on top. Bake at 350 degrees for 15 minutes to melt cheese and warm the enchiladas.
