Braised Herb Chicken And Vegetables Recipe

Ingredients
  • 2 tbsp. flour
  • 2 tsp.'s paprika
  • 1 tsp. salt
  • 1 tsp. thyme
  • 1 tsp. oregano
  • 1/2 tsp. pepper
  • 8 chicken thighs or legs, skinned
  • 1 tsp. olive oil
  • 1 1/2 C. carrots (I use whole baby carrots)
  • 1 large onion cut into 8 wedges
  • 1 tsp. minced garlic
  • 1 1/2 C. chicken broth
  • 1/2 C. dry white wine
  • 1 1/2 lbs. small red or white potatoes (halved or quartered depending on size)

Directions
  1. Combine first 6 ingredients in a zip-loc bag. Add chicken and seal, shake to coat
  2. Heat oil in dutch oven over medium. Add chicken and remaining flour seasoning to pan. Cook about 3 min's per side or until lightly browned.
  3. Add carrot, onion, garlic, broth, wine, and potatoes. Bring to a boil. Reduce heat and simmer 30-40 min.'s until chicken is done and vegetables tender.
  4. Place chicken and veggies in shallow bowls and ladle with broth. I serve with french bread.
