Chocolate Marble Cheesecake

- 125g gingersnap biscuits shopping list
- 2 Tbs cocoa powder shopping list
- 40g butter shopping list
- 400g cream cheese shopping list
- 150g caster sugar shopping list
- 3 eggs shopping list
- 2 tsp vanilla essence shopping list
- 150ml double cream shopping list
- 200g plain dark chocolate, broken into pieces shopping list
- pouring cream and chocolate sauce, to serve shopping list
How to make it
- Put the biscuits in a polythene bag and crush with a rolling pin, then mix with the cocoa
- Melt the butter in a saucepan and stir in the biscuit mixture
- Press the mixture into the base of 20cm spring-form cake tin
- Beat the cream cheese to soften
- Then beat in the sugar, eggs, vanilla essence and cream
- Melt the chocolate in a heatproof bowl over gently simmering water
- Spoon about one-third of the cream cheese mixture into a seperate bowl and beat the chocolate into that
- Pour the plain cream cheese mixture into the tin
- Then place spoonfuls of the cream cheese / chocolate mixture over it
- Use a knife to swirl the mixtures together lightly to create a marbled effect
- Bake in a preheated oven for 35-40 minutes or until the centre of the cheesecake feels just set
- Turn off the oven and leave the cheesecake to cool in it, before transfering it to the refrigerator
- Serve chilled with pouring cream and chocolate sauce
