How to make it

  • Heat apple juice, onion and tarragon then reduce to 1/4 cup and remove onion.
  • Add brandy and ignite then reduce to 1/4 cup again.
  • Meanwhile rub chicken with butter and bake at 350 for 25 minutes.
  • Bring apple mixture to a simmer then microwave cream until room temperature.
  • Slowly add to apple mixture and reduce until thick about 5 minutes.
  • Arrange apple slices in a fan and put chicken breast on top then put 1/3 of sauce on each breast.
  • Garnish with parsley and serve immediately.
