Apple Brandy Chicken Recipe
APPLE BRANDY CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Flack Estate in Quinlan, Texas in 1980.

Ingredients
  • 3 boneless skinless chicken breasts
  • 2 cups apple juice
  • 1 teaspoon dried tarragon
  • 1/3 cup brandy
  • 1/2 cup whipping cream
  • 1 small white onion finely chopped
  • Parsley for garnish
  • Red apple thinly sliced for garnish

Directions
  1. Heat apple juice, onion and tarragon then reduce to 1/4 cup and remove onion.
  2. Add brandy and ignite then reduce to 1/4 cup again.
  3. Meanwhile rub chicken with butter and bake at 350 for 25 minutes.
  4. Bring apple mixture to a simmer then microwave cream until room temperature.
  5. Slowly add to apple mixture and reduce until thick about 5 minutes.
  6. Arrange apple slices in a fan and put chicken breast on top then put 1/3 of sauce on each breast.
  7. Garnish with parsley and serve immediately.
