Sweet Onion Bake Recipe

Very good and very different. If you love onions, please try this one, I think you will love it. I make this often and eat it with chicken, fish, ham or beef.

Ingredients
- 7-1/2 cups sliced yellow onions
- 1/4 cup butter
- 1/2 cup uncooked rice
- 5 cups boiling salted water
- 3/4 cup grated Swiss cheese
- 2/3 cup half and half
- 2 tablespoons chopped pimento
Directions
- Peel and slice onions 1/4-inch think.
- Sauté onions in butter until soft.
- Cook rice in water for 5 minutes then drain well.
- Combine rice with onions, cheese, half-and-half and pimento.
- Spoon into baking dish and bake at 300 for 1 hour.
