Coconut Fish With Baby Potatoes

- 4-6 portions of Hake shopping list
- 60ml olive oil shopping list
- 2 cloves garlic shopping list
- 1 red Chillie, chopped shopping list
- 3ml curry powder shopping list
- salt and pepper shopping list
- 410g coconut milk shopping list
- 18 baby potatoes, parboiled shopping list
- 15ml butter shopping list
- 30g pine nuts shopping list
- handful coriander shopping list
How to make it
- Preheat over to 180 degrees
- Place Hake, skin down on a roasting pan and drizzle with olive oil
- Place Garlic cloves, Chilli, Curry powder, Salt & pepper into a bowl.
- Add the Coconut milk and stir to combine
- Pour into the pan with fish
- Add the Potatoes and bake for 20 min
- Remove from oven and dot hake with butter and sprinkle Pine nuts over.
- Return to oven and bake for a further 5 minutes.
- When fish is cooked through, remove from oven and serve with fresh Coriander.
