Mutton Breast Cutlet Recipe
This is my mom's recipe. My entire family hogs on. All time favorite.. try it

Ingredients
  • For Marination
  • 8 pieces Mutton ribs/ chops
  • 2 tsp Ginger paste
  • 2 tsp garlic paste
  • 1 tbsp of mint leaf paste or coriander paste
  • 1/2 tsp of coriander powder
  • 1/2 tsp of cumin seed powder
  • 1 tbsp of golden fried jullienes of onion (just thinly cut onnions fry them in oil untill golden brown with 1/6 tsp of sugar and slight salt to taste)
  • 1/4 tsp garam masala (powder of equal quantity of cardamon, clove, cinnamon sticks; mixed all together)
  • 2 tsp of lemon juice
  • to tenderise:- the meat one can add hung curd2 tbsp, then avoid the lemon juice or One can add 2 tbsp of rum
  • For the batter
  • All purpose flour
  • 2 eggs whites
  • Bread crumbs
  • Pinch of baking powder or cooking soda
  • Oil to pan fry

Directions
  1. To prepare the meat.
  2. Take the mutton chops/mutton ribs and flatten the meat using a wooden hammer or any heavy kitchen tool. the flesh on the bone should be scrapped. Only little dlesh cover the rib sticks. (Much like pork chops)
  3. In the marination bowl add all the marination ingredients and mix well with youghurt or lime juice.. Now add the mutton chops and smear the marination on it. Keep it in refrigeration overnight or atleast 6 hrs.
  4. Add the Baking powder, or Cooking soda with the flour and sieve it for the Baking powder to mix well with flour.
  5. To fry
  6. Take the Mutton chops First dip it in egg white
  7. then dust it with flour
  8. Then coat it with bread crumbs
  9. Take a heavy bottom flat frying pan.
  10. Add Oil and let it heat up
  11. Now slowly add the Mutton chops and fry till golden brown.
  12. Serve it hot with cold coriander chutney
