Warm Irish Bacon and Tomato Salad Recipe

How to make it

  • To make dressing blend oil, vinegar, mustard and cheese in a blender.
  • Season with salt and pepper the cook bacon in a pan until crisp.
  • In a large bowl mix leaves and tomatoes together.
  • Add warm bacon and any juices in the pan then stir in dressing and serve immediately.

    I've often made what I call a "BLT Salad" using mayonnaise which has been thinned down with milk, enough to pour over the salad.........so this salad with an alternate dressing looks really good, especially since I love blue cheese. Can't wait to try it. Thank you.
