Ingredients

8 slices traditional Irish bacon chopped

4 ounces mixed salad leaves

4 tomatoes chopped

1/2 teaspoon salt

1 teaspoon freshly ground black pepper

Dressing:

4 tablespoons walnut oil

1 tablespoon red wine vinegar

1 tablespoon whole grain mustard

2 ounces Irish blue cheese crumbled

Directions

To make dressing blend oil, vinegar, mustard and cheese in a blender.

Season with salt and pepper the cook bacon in a pan until crisp.

In a large bowl mix leaves and tomatoes together.

Add warm bacon and any juices in the pan then stir in dressing and serve immediately.

I've often made what I call a "BLT Salad" using mayonnaise which has been thinned down with milk, enough to pour over the salad.........so this salad with an alternate dressing looks really good, especially since I love blue cheese. Can't wait to try it. Thank you.
