How to make it

  • Cook onion and garlic in butter until soft then add herbs and breadcrumbs.
  • Cool a little before mixing in the egg and seasoning well with salt and freshly ground pepper.
  • Preheat oven to 300.
  • To prepare the meat trim off any excess fat and prick center of meat with a kitchen fork.
  • Combine all spicy past ingredients and brush meat with this mixture.
  • Spread stuffing over meat then roll it up and tie firmly with cotton string.
  • Brown meat with a little oil in hot roasting pan and cook in oven seam side up for three hours.
  • Halfway through cooking remove joint from oven and brush liberally with the spicy paste.
  • Return to oven seam side down and continue cooking.
  • To make the sauce bring everything to a boil and simmer 15 minutes then discard the thyme.
  • Liquidize the mixture then strain and season to taste.
  • Serve the sliced meat on heated plates with its sauce accompanied by mashed potatoes and salad.
