    michelle it depends on the recipe ive made lots of candy if it says dont stir it leave it
    go by which ever recipe you want to use i have several that dont want to to stir it i know its hard not to ....we just want to run over and do it ................pick your poison............if youre afraid of burning the candy i would stir it try it both ways and see how it turns out ......if no difference use the one you like better........
