Onion And Parsley Muffins Recipe
We discovered these muffins at a Mrs. Fields shop on the way to Potomac for Thanksgiving one year. What a great accompaniment to a good cuppa joe!

Ingredients
  • 10 ounces buttermilk
  • 1/2 cup chredded cheddar cheese
  • 2 large eggs
  • 1/2 cup vegetanle oil
  • 1/2 cup fresh parsley, minced
  • 2 tablespoons onion, grated
  • 4 dashes Worcestershire sauce
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Directions
  1. Preheat oven to 400 degrees F.
  2. Heat buttermilk in pan over medium heat.
  3. Add cheese and heat until melted.
  4. Combine eggs, oil, milk mixture, parsley, onion and Worcestershire in bowl.
  5. In another bowl, combine the flour, baking powder, baking soda and salt.
  6. Combine wet and dry ingredients until just moistened.
  7. Use non-stick spray on either 2 cupcake-size tins or 1 "giant" muffin pan.
  8. Bake in 400 degree F oven for 20 to 25 minutes or until they test done.
